Nice-Cream: A Guilt Free Summer Treat

Ice cream without the added sugars, cholesterol-raising saturated fat, oils, emulsifiers, colouring's, and other hidden nasties—oh my!

That’s right, we’re talking about a light-on-the-conscious, emphasis-on-the-health versions of one of our favourite summer-time treats. With minimal effort, you can whip together your own version of “nice cream” to dish out to yourself and your family. That is, if you’re keen to share!

Nice cream is usually made from a base of frozen bananas, which have a creamy, ice-cream-like texture when blended. But don’t worry, these recipes won’t just taste like bananas.

Before you hop on into these recipes, here are few tips to make the perfect nice cream:

  1. A food processor works best, but a high-powered blender will also do the trick.

  2. If you’d like it more frozen, allow around 1 hour to refreeze after blending and before serving.

  3. Only use over-ripe bananas that will give you a sweeter taste.

  4. Break the bananas into manageable chunks before freezing.

  5. If you’re struggling to blend them, add a bit of water or plant-based milk to help. Though you may have to refreeze after this.

Strawberry-Banana Nice Cream (serves 4, from Nutrition Facts) 

Ingredients:

  • 4 frozen bananas

  • 2 tbsp almond butter

  • 1 cup strawberries sliced

  • ½ tsp of vanilla extract

Matcha Nice Cream (serves 4)

For those after an antioxidant hit, matcha is a great addition to nice cream.

Tip: try and find matcha grown in Japan due to concerns over lead contamination of those made in China.

Ingredients:

  • 4 frozen bananas

  • ½ - 1 tsp of matcha powder

Roasted Almond and Cinnamon Banana (serves 4)

Ingredients:

  • 4 frozen bananas

  • 1 tsp of cinnamon

  • Handful of roasted almonds roughly chopped or pulsed in food processor for topping

Chocolate Peanut Butter Nice Cream (serves 4, from Chocolate Covered Katie)

Want this treat to be after-gym appropriate? This recipe calls for a bit of protein powder to do just that.

Ingredients:

  • 4 overripe bananas

  • ¼ cup peanut butter

  • 1/3 cup cacao powder

  • ¼ tsp vanilla extract

  • 1/8 tsp salt

  • Optional 1 tbsp chocolate plant-based protein powder

Mango and Macadamia Nice Cream (serves 1, from Kayla Itsines)

We’ve swapped the coconut milk in the original recipe for a handful of cashews. When soaked and blended, these are still creamy with much less saturated fat.

Ingredients:

  • 1 medium frozen banana

  • ½ cup frozen mango pieces

  • ¼ cup soaked cashews

  • 1 tbsp maple syrup

  • 5-6 macadamia nuts chopped for topping

Mint Chocolate Chip Nice Cream (serves 1-2, from Chocolate Covered Katie)

Feel free to add in a pinch of green spirulina powder or some natural food dye for fresh green mint choc treat the kiddos will love.

Ingredients:

  • 2 frozen bananas

  • Pinch of salt

  • 1/8 tsp peppermint extract

  • optional ½ cup coconut milk or soaked raw cashews

  • 2-3 tbsp chips (or chopped chunks) of dairy-free dark chocolate
