Give Your Leftovers A New Life

Ever wonder what to do with your holiday leftovers? You just need a touch of creativity!

If your meal had heaps of flavour and spice it would pair nicely with a simple carb like pasta or the baked potato below. If it’s simple roasted veggies, try them in a salad with a nice dressing—or even in a wrap for lunch the next day.

Don’t be afraid to try something funky. There are few things a yummy sauce or avocado can’t fix!

Here are some guidelines for turning that bit of leftover protein and veggies into another hearty meal.

Everything Pasta (serves 2)

A tomato-based sauce will make this comforting, while creamy avocado stirred through will keep things light and fresh.


  • ¾-1 cup of your favourite pasta

  • Your leftovers

  • Your favourite pasta sauce

  • OR ½ avocado diced


  1. Boil your pasta to al dente in lightly salted water.

  2. Drain and return to the pot.

  3. Add in your leftovers and heat on low heat while stirring for a few minutes.

  4. If using marinara, add in the sauce after draining the pasta and before heating.

  5. If using avocado, spoon warmed leftover pasta into a bowl and gently stir in diced avocado.

Loaded Sweet Potatoes(serves 2)

Sweet potatoes are great sources of energy, fibre, vitamins, and antioxidants. Top them with your leftover food and favourite toppings to make something extra special.


  • 2 medium to large sweet potatoes

  • Dash of olive oil

  • Garlic flakes

  • Sliced avocado

  • Hot sauce

  • Fresh herbs (such as parsley or dill)


  1. Prod the sweet potatoes with a fork in several places. Wrap in foil and roast in the oven at 180C for 45 minutes.

  2. Half way through cooking the potatoes, unwrap and cut them in half them. Drizzle with a bit of olive oil, salt, pepper, and garlic flakes. Return to oven and continue baking, unwrapped.

  3. Remove the potatoes, squash the centre, making room for the leftovers.

  4. Top with your leftovers, add sliced avocado, fresh herbs and hot sauce.

Everything Salad (serves as many as you like!)

It doesn’t get much easier than this!

  • Your leftovers

  • A dressing to match!


  1. Mix your greens and leftovers. Drizzle with your favourite dressing, toss, and enjoy!

Don’t forget about leftover fruit! Blend these up with some greens for a healthy smoothie, or puree and place in an ice block mould for yummy frozen treats.
