Mango popsicles (makes 10 popsicles, from Choosing Chia)

  • ¾ cup of orange juice

  • Juice of 1 lime

  • 1 tsp vanilla extract

  1. Peel and cut the mangoes. Add it to a blender with the orange and lime juice and blend until smooth

  3. Fill the popsicle moulds by alternating a bit of the mango puree and the yoghurt. Use a toothpick to gently swirl them together.

  4. Freeze them overnight.

  5. To remove, place mould in large bowl with hot water for 30 seconds. Store in a large freezer bag.

  5. Transfer to baking sheet and toast for about 10-15 minutes until light golden in colour.

  6. Allow to cool before storing.

Lemon Bliss Balls (from Whole Food Simply)

Tip: Do not over-blend the mixture as it makes it harder to roll.

  • 1 cup raw cashews

  • 1 cup desiccated coconut

  • Zest of one large lemon

  • Juice of half a lemon

  • ½ tsp vanilla extract

  • A pinch of salt

  • 2 tbsp maple syrup

  1. Blend all ingredients in a food processor until you get a sticky crumbed mixture.

  2. Grab roughly 1.5-2 tablespoons of the mixture and roll it into bite-sized balls.

  3. Roll these balls through some extra coconut and place all in the fridge to set.
